Canning

Today I tried my hand at canning Salsa again.  This time using Yellow Pear tomatoes and a variety of peppers from my garden.

First Batch

Here we have the lovely green sweet banana peppers, hot banana peppers, jalapeno peppers and some Serrano.  The beautiful yellow pear tomatoes and my first batch of mixture.  Super pretty.  I liked all the yellow with touches of red and green.

First batch finished. YUM

What I didn’t like was the color changing.  But I can deal with it.  I know that’s what canning does to stuff.  I know this much, the peppers were free, and the tomatoes cost 15$ for about 25 pounds, so …. for 15$ I will have over 100$ worth of salsa.  Can’t beat that!!  You can see the salsa beginning to settle to the bottom of the jars.

Second batch in the canner

Yup you read it right, my second batch is in the canner!  This one is MUCH HOTTER than the first because I added the remainder of my jalapenos and Serrano’s!

One for the fridge

We decided to keep one fresh, it won’t last more than a week so it’s all good!

beautiful yellow pear tomatoes .... (uploader wouldn't let me click "medium" on picture size)

This is what I still have left.  I’m not sure if I’ll just keep them fresh and take them to Oneg, OR …… try canning them whole and see what happens!!  Anyway, that is my canning adventure for today.  Second batch is still on the stove, tonight is going to be a long night!

  4. First of all I want to say terrific blog! I had a quick question which I’d like to ask if you don’t mind. I was interested to find out how you center yourself and clear your head prior to writing. I have had difficulty clearing my mind in getting my thoughts out there. I truly do take pleasure in writing however it just seems like the first 10 to 15 minutes tend to be wasted simply just trying to figure out how to begin. Any suggestions or hints? Cheers!

    • I know what you mean, about trying to center yourself. Prayer helps especially when I am really stuck. It’s frustrating when I want to write about something and can’t figure out how to get it on paper! Usually I will start writing in task manager or something. And transfer by copy and paste to my blog. I have times where I will get a sentence or two down, then have to walk away. Other times I just write and then re-write when I realize I am only repeating myself. I think the best way to write is to pretend that you are writing to your best friend, like a letter. Then before you hit the publish button read it again to be sure it’s what you want to say. Edit it where necessary. I’m glad you enjoy my site. I’m not here as often as I’d like to be, so when I discover anyone has come to read it’s like hitting the mail box and seeing something awesome inside!
